Summary

A review with 50 refs. covering the structure of various colla­gen types, the nature of crosslinking bonds, and the methods for preparing partial collagen destruction products and collagen denaturation proteins, viz., gelatin. Gelatin gel structures are reviewed. Two mechanisms involving the formation of the helical structure while the state of native collagen is being reinstated [35, 36] and two gelling mechanisms are discussed in detail [44,45]. Factors like gelatin origin and composition, concentration of gelatin in the solution, and temperature, which affect the rate of renaturation of ge­latin to the collagen form, are discussed.
